Uncle Sam’s Pancake House, Colorado Springs, CO
A quaint little spot and a mere 10-minute drive fro the base of Pike’s Peak… America’s Mountain. Despite coming on a Saturday morning, the wait time for a table was quite reasonable, although a tad longer than a Le Mans pit stop of the same 60s vintage.
Given that Uncle Sam has been flipping pancakes since the middle of the the last century, one would be forgiven for the having high expectations, however, much like Tifosi at the start of a Formula One Grand Prix season, our dreams of victory were swiftly shattered.
